A glorious dish on the way! Side dishes, like this one, have a supportive role but this one is perfect by itself. It could be great with roasted eggplants on the side or chops maybe or even fish. It is seasonal and extremely nutritious. High in the b complex vitamins and magnesium! Please give it a try!


Serves 4-5

  • 1 Tbls olive oil

  • 1 small red onion

  • 2 garlic cloves very finely chopped

  • 2 tsp turmeric

  • 2 Tbls tomato purée fresh

  • 250 gr bulgur wheat or quinoa or buckwheat

  • 4 tomatoes chopped

  • 15 gr walnuts roughly chopped

  • 1/2 pomegranate seeds

  • 1 handful parsley

  • 1 handful mint leaves

  • 1 large lemon juice

  • 85ml olive oil

  • 1 tsp honey

Sauté the onion and then the garlic in the olive oil. Add the cumin and then the tomato purée and 175ml water. Add the bulgur, season, and remove from the heat.

Let it sit for 15 min. The water should have absorbed.

Add the tomatoes, the walnuts, pomegranate seeds, herbs and stir well.

Put the lemon juice, the olive oil and honey after you mix it up.
